Native winery producing high quality mead with locally sourced ingredients. I use honey directly from hives along the coastal region of Mississippi and combine that with various spices and fruits to create unique, one of a kind flavors. The honey differs from year to year making each batch its own unique blend of local flavors. Following the seasons and utilizing fresh picked fruit I will have batches containing many different fruits including strawberries, pears, peaches, elderberries, blackberries, blueberries, apples, satsumas, persimmons, muscadines, watermelons, figs, plums, pumpkins, raspberries, pecans, and anything else that can be paired with those.
Mead is an ancient and complex beverage that is really its own category from wine, even though it is considered "honey wine". There are dry, semi-sweet, and sweet meads. Some can be oaked to impart smokiness, or mixed with beer to become a "braggot", or made with maple syrup to produce an "acerglyn". The sky is truly the limit with this beverage!
